
Cheesy Beef Zucchini Boats
Ingredients
- 1 lb. Grass fed ground beef
- 2 Tbsp chili powder
- 1/2 tsp paprika
- 1/2 tsp oregano
- 1/2 tsp cumin
- 1 Tbsp garlic powder
- 1/8 tsp cayenne pepper
- 1 cup of chopped sweet peppers
- 1/4-1/2 sweet onion chopped
- 3-4 small scallions chopped
- 6 oz tomato paste can
- 8 oz tomato sauce can
- 2 cups non-fat cottage cheese
- 2 Tbsp fresh cilantro on top when served optional
Instructions
- Preheat oven to 400F
- Cook ground beef, when browned add chili powder, paprika, oregano, cumin, garlic, cayenne, sweet peppers, onion and tomato paste and sauce.
- Then make a hole in the middle and add cottage cheese, when melted, stir in with the rest of the mixture.
- Boil water and salt to soften raw zucchini halves. Boil for 5-8 mins. Carefully remove and let cool. Pat extra moisture out with paper towels.
- Take a spoon or melon baller to scoop out seeded middles to create a pit for the beef mixture. Optional: Add some of that removed zucchini, chop and add to beef mixture.
- Add mixture to 'boats'. Add sprinkles of cottage cheese on top and bake on foil-lined baking sheet at 400F for about 30-40 minutes.
- When done, let cool and add salsa and cilantro on top. Extra option, add a dollop of low fat plain greek yogurt on top.
