Cook ground beef, when browned add chili powder, paprika, oregano, cumin, garlic, cayenne, sweet peppers, onion and tomato paste and sauce.
Then make a hole in the middle and add cottage cheese, when melted, stir in with the rest of the mixture.
Boil water and salt to soften raw zucchini halves. Boil for 5-8 mins. Carefully remove and let cool. Pat extra moisture out with paper towels.
Take a spoon or melon baller to scoop out seeded middles to create a pit for the beef mixture. Optional: Add some of that removed zucchini, chop and add to beef mixture.
Add mixture to ‘boats’. Add sprinkles of cottage cheese on top and bake on foil-lined baking sheet at 400F for about 30-40 minutes.
When done, let cool and add salsa and cilantro on top. Extra option, add a dollop of low fat plain greek yogurt on top.
