Cheesy Beef Zucchini Boats

Ingredients
  • 1lb. Grass fed ground beef
  • 2Tbsp chili powder
  • 1/2tsp paprika
  • 1/2tsp oregano
  • 1/2tsp cumin
  • 1Tbsp garlic powder
  • 1/8tsp cayenne pepper
  • 1cup of chopped sweet peppers
  • 1/4-1/2 sweet onionchopped
  • 3-4 small scallionschopped
  • 6oz tomato pastecan
  • 8oz tomato saucecan
  • 2cups non-fat cottage cheese
  • 2Tbsp fresh cilantro on top when served.optional
Instructions
  1. Preheat oven to 400F
  2. Cook ground beef, when browned add chili powder, paprika, oregano, cumin, garlic, cayenne, sweet peppers, onion and tomato paste and sauce.
  3. Then make a hole in the middle and add cottage cheese, when melted, stir in with the rest of the mixture.
  4. Boil water and salt to soften raw zucchini halves. Boil for 5-8 mins. Carefully remove and let cool. Pat extra moisture out with paper towels.
  5. Take a spoon or melon baller to scoop out seeded middles to create a pit for the beef mixture. Optional: Add some of that removed zucchini, chop and add to beef mixture.
  6. Add mixture to ‘boats’. Add sprinkles of cottage cheese on top and bake on foil-lined baking sheet at 400F for about 30-40 minutes.
  7. When done, let cool and add salsa and cilantro on top. Extra option, add a dollop of low fat plain greek yogurt on top.
