- 2 cloves garlic
- 1 tsp black pepper
- 2 tsp nutritional yeast
- 1 bag frozen spinach (thaw and press all water out)
- 1 can artichokes (in water – drained and diced)
- 2 tsp Celtic sea salt
- 2 cups low fat cottage cheese
- 1 tsp coconut oil
Over medium heat in skillet saute garlic in coconut oil. Add in pressed chopped spinach and stir. Add remaining ingredients and stir continuously until cheese breaks down and starts to look gooey.
Serve with Nut Thins or Celery sticks.
