Shaved Brussels Sprouts with Bacon, Leeks and Pomegranate Seeds

Ingredients
  

  • 2 lbs Brussels Sprouts
  • 5 Slices Bacon, chopped
  • 1 Leek, sliced, white part only
  • 1 clove Garlic, minced
  • 2/3 cup Chicken Broth
  • 3/4 tsp Celtic Sea Salt
  • 2 tbsp Pomegranate seeds

Instructions
 

  • Shred brussels sprouts. Cook bacon - set aside, drain grease - keep. Add brussels sprouts, leek and garlic to pan(add 1-2 Tbsp. bacon grease) and saute for 5 minutes. Add chicken broth and salt. Cover and steam for 5 minutes, until brussels sprouts are bright green and tender. Return bacon to pan. Garnish with pomegranate seeds and serve warm.
