Warm Blueberry Crumble

Ingredients
  

Topping:

  • 1/2 cup gluten-free oats (I use Farmers We Know brand from Costco)
  • 1/4 cup almond flour
  • 3 tbsp coconut sugar
  • 1/4 cup unsweetened organic applesauce
  • 1/2 tsp cinnamon
  • 2 tbsp coconut oil (I use Nutiva)

Filling:

  • 4 cups blueberries
  • 1 tbsp lemon juice
  • 2 tbsp maple syrup
  • 1 tbsp arrowroot powder

Instructions
 

  • Mix together topping ingrdients in a bowl and set aside. Heat a cast iron skillet over medium-high heat. Add the blueberries, lemon juice maple syrup and arrowroot powder and stir. Cook for 3 minutes and allow blueberries to release some liquid and thicken. Turn off heat. Top filling with crumble and bake on bottom rack of oven for 18 minutes. Then, place the skillet on the top rack and turn the broiler on high and broil for 3 minutes.
